CHICKEN PIZZA

Ingredients

400 grams chicken mince
2 tsps mixed herbs
1 tsp crushed black peppercorns
2 tsps onion powder
1½ tsps garlic powder
¾ tsp Tata Sampann Chilli Powder
Salt to taste
1 tbsp corn starch
3 eggs
Oil for greasing + for deep frying
Powdered corn flakes as required
Pizza sauce as required
100 grams mozzarella cheese
Dried red chilli flakes for sprinkling
Dried mixed herbs for sprinkling
A few basil leaves

Method

1. In a large bowl, add chicken mince, mixed herbs, crushed black peppercorns, onion powder, garlic powder, Tata Sampann Chilli Powder, salt and corn starch.
2. Break in an egg and mix till well combined. Place a plastic sheet on it, add the chicken mixture on it. Grease your hand with oil, pat and spread the mixture to form a pizza base. Cover with another plastic sheet and freeze till firm.
3. Break remaining eggs in a large thali, add salt, 2 tbsps water and whisk well using a fork. Dip the chicken pizza base from both sides.
4. In a large plate, add powdered corn flakes, add salt and mix well. Coat the chicken pizza base with it on both sides.
5. Heat sufficient oil in a broad non-stick pan, deep fry the prepared chicken pizza base till golden and crisp. Take it off the heat.
6. Place it on a baking tray, add pizza sauce and spread it evenly. Grate mozzarella cheese on top.
7. Sprinkle dried red chilli flakes, dried mixed herbs, and place hand torn basil leaves. Bake till cheese melts.
8. Transfer into a serving plate, slice and serve hot.
