Chicken On Sugarcane Sticks | Sanjeev Kapoor Khazana

Chicken mince mixture wrapped around sugar cane sticks and shallow fried.

CHICKEN ON SUGARCANE STICKS

Ingredients

2 cups chicken mince
Sugarcane sticks as required, cut into 4 inch long batons
1 medium onion, chopped
2 tablespoons chopped garlic
2 eggs
2 tablespoons rice flour
Salt to taste
1 teaspoon fish sauce
1 teaspoon lemon juice
Oil for shallow-frying

Method

1. Blend together chicken mince, onion, garlic, eggs, rice flour, salt and fish sauce. Add lemon juice and blend again to a smooth mixture.
2. Transfer the mixture into a bowl. Divide the mixture into equal portions and wrap them around sugarcane sticks.
3. Heat some oil in a non-stick pan. Add the sugarcane sticks and shallow-fry till golden from all sides and chicken is fully cooked.
4. Serve hot with sweet chilli sauce or tomato ketchup.
