The much-loved Mac n' Cheese in a desi avatar. Chicken lovers, you're in for a heavenly treat!

CHICKEN MAKHANI MAC N CHEESE

Ingredients

2 boneless chicken breasts
2 cups boiled macaroni pasta
2 tbsps yogurt
1 tsp Kashmiri red chilli powder
½ tsp garam masala powder
A pinch of dried fenugreek leaves (kasuri methi) powder
1 tbsp ginger-garlic paste
2 tbsps Kashmiri red chilli paste
1½ tbsps mustard oil
Salt to taste
2 tbsps oil
1 tbsp butter
2 tbsps butter
2 tbsps refined flour (maida)
2 cups milk
1 cup ready-made makhani gravy
1/3 cup grated processed cheese + for sprinkling
1/3 cup grated mozzarella cheese + for sprinkling
Bread crumbs for sprinkling
2 tbsps butter
Cherry tomato halves for garnish
Fresh basil leaves for garnish

Method

1. Take yogurt in a large bowl. Add Kashmiri red chilli powder, garam masala powder, dried fenugreek leaves powder, ginger-garlic paste, Kashmiri red chilli paste, mustard oil, salt and whisk till well combined.
2. Add the chicken breasts and rub the masala well on all the sides of the chicken. Set aside to marinate for 10-15 minutes.
3. Preheat the oven at 180ºC.
4. Heat oil and butter in a non-stick grill pan, place the chicken on it and grill on high heat for 2-3 minutes. Flip and grill the other side for 2-3 minutes. Reduce the heat to medium and continue to cook the chicken is cooked completely.
5. Place the cooked chicken breasts on a worktop, thinly slice them.
6. For the sauce, heat butter in a non-stick pan. Add refined flour and sauté for 1-2 mins. Add milk in batches and mix well. Cook till the mixture thickens.
7. Add makhani gravy, mix and cook for 1-2 minutes. Add the processed cheese and mozzarella cheese and mix well. Cook till cheese melts.
8. Add pasta and chicken slices and mix well. Cook for 1 minute.
9. Transfer the pasta mixture into a glass baking dish. Sprinkle processed cheese and mozzarella cheese on top. Sprinkle bread crumbs and bake in the preheated oven for 10-15 minutes.
10. Remove the baking dish from the oven and garnish it with cherry tomatoes and basil leaves. Serve hot.
