Enjoy and stay tuned for more.#ChickenKolhapuri #ChickenCurry #ChefHarpalSinghIngredient QuantityFor Marination:Chicken on Bone 800 gm.Ginger-garlic paste 1½ tbspLemon juice 1 no.Red chilli powder 2 tspTurmeric powder ½ tspGaram masala powder 1 tspSalt to tasteFor Masala:Bay leaf 1 no.Black cardamom 2 no.Green Cardamom 4-5 no.Cinnamon stick ½ inchCloves 4-5 no.Star anise 1 no.Mace ½ bladeBlack peppercorn 1 tspCoriander seeds 1 tbspCumin seeds 1 tspDry red chilli 4-5 no.Garlic chopped 1 tbspGinger chopped 1 tbspDried Coconut 100 gm.Poppy seeds 1 tbspWhite sesame seeds 1 tbspOnion Slice 2 no. Tomato chopped 2-3 no.Water ¼ cupOil 6 tbspSalt to tasteCoriander sprig for garnishMethod:For Marination: • Wash and pat dry the chicken and place it on the bowl. • Add ginger-garlic paste, lemon juice, red chilli powder, turmeric powder, garam masala powder and salt, mix well and keep it aside for 20-25 min.For Masala: • Heat 3 tbsp of oil in a kadai; add bay leaf, black cardamom, green cardamom, cinnamon stick, cloves, star anise, mace, black peppercorn, mix well and sauté for 1 min. • Add coriander seeds, cumin seeds, mix well and sauté till spices are fragrant. • Add dry red chillies, garlic chopped, ginger chopped, mix well and sauté for 30 sec. • Add dried coconut, poppy seeds, white sesame seeds, mix well and sauté for another 1min. • Add onion slice, mix well and sauté for 4-5 min. on low flame. • Add chopped tomato, mix well and sauté for 4-5 min. • Remove in a bowl and cool it to a room temperature • Take mixer jar, add prepared masala and ¼ cup of water and grind to a smooth paste. Keep it aside. • Heat 2-3 tbsp of oil in kadai; add marinated chicken and sauté for 8-10 min. • Mean while Put little water to the marinated bowl and mix well.
