CHICKEN KEEMA TIKKIIngredients250 grams chicken mince2 teaspoons ginger-green chilli paste5-6 French beans, finely chopped1 small carrot, finely chopped2-3 tablespoons green peas, blanched and mashed3-4 tablespoons oats1 small potato, boiled and peeledSalt to taste1 egg white1 tablespoon chopped fresh coriander leaves½ cup dried brown breadcrumbs2 teaspoons oilChaat masala for sprinkling½ small iceberg lettuce, shreddedOnion rings as required1 lemon, cut into wedges3-4 cherry tomatoesMint chutney for servingMethod1. Take chicken mince in a bowl. Add ginger-green chilli paste, French beans, carrot, green peas and oats.2. Grate in potato and add salt and mix. Add egg white and mix. Add coriander leaves and mix well. 3. Spread breadcrumbs on a plate.4. Divide the chicken mixture into equal portions, coat with breadcrumbs and shape into tikkis. 5. Heat oil in a non-stick pan. Place the tikkis and shallow-fry from both sides till golden brown and chicken is cooked. Switch off heat and sprinkle some chaat masala on top.6. Place shredded lettuce leaves, onion rings, lemon wedges and cherry tomatoes on a serving platter. 7.
