Chicken Keema Tikki | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

CHICKEN KEEMA TIKKI

Ingredients

250 grams chicken mince
2 teaspoons ginger-green chilli paste
5-6 French beans, finely chopped
1 small carrot, finely chopped
2-3 tablespoons green peas, blanched and mashed
3-4 tablespoons oats
1 small potato, boiled and peeled
Salt to taste
1 egg white
1 tablespoon chopped fresh coriander leaves
½ cup dried brown breadcrumbs
2 teaspoons oil
Chaat masala for sprinkling
½ small iceberg lettuce, shredded
Onion rings as required
1 lemon, cut into wedges
3-4 cherry tomatoes
Mint chutney for serving

Method

1. Take chicken mince in a bowl. Add ginger-green chilli paste, French beans, carrot, green peas and oats.
2. Grate in potato and add salt and mix. Add egg white and mix. Add coriander leaves and mix well.
3. Spread breadcrumbs on a plate.
4. Divide the chicken mixture into equal portions, coat with breadcrumbs and shape into tikkis.
5. Heat oil in a non-stick pan. Place the tikkis and shallow-fry from both sides till golden brown and chicken is cooked. Switch off heat and sprinkle some chaat masala on top.
6. Place shredded lettuce leaves, onion rings, lemon wedges and cherry tomatoes on a serving platter.
7. Place shallow-fried tikkis on top and serve hot with mint chutney.
