Chicken Frankie | Sanjeev Kapoor Khazana

One of the popular street food recipes loved by one and all. Spicy chicken mixture wrapped in refined flour rotis.

CHICKEN FRANKIE - (Serves - 4)

Ingredients

250 grams boneless chicken, cut into thin strips
2 readymade refined flour rotis
1 tablespoon oil + for drizzling
1 medium onion, sliced
1 tablespoon ginger-garlic paste
¼ teaspoon turmeric powder
2 teaspoons red chilli powder
1 teaspoon coriander powder
Salt to taste
1 medium tomato, finely chopped
2 teaspoons vinegar
1-2 green chillies, finely chopped
1 teaspoon chaat masala
4 eggs
1 medium onion, finely chopped

Method

1. Heat oil in a non-stick pan. Add sliced onion and sauté till golden. Add ginger-garlic paste and sauté for a minute. Add turmeric powder, 1 teaspoon chilli powder, coriander powder, mix and cook for 30 seconds.
2. Add chicken, mix and cook for a minute. Add salt, mix and cook for a minute. Add tomato, mix, cover and cook till chicken is done. Transfer in a bowl.
3. To prepare chilli vinegar, add vinegar to chopped green chillies.
4. To prepare spice mix, combine remaining chilli powder, chaat masala and salt in another bowl and mix well.
5. Break eggs in another bowl. Add salt and whisk well.
6. Heat rotis on a non-stick tawa from both sides.
7. Place a roti on another non-stick pan and pour some egg mixture on top. Drizzle some oil on the edges and cook for a minute. Flip and cook till egg is done. Transfer on the worktop.
8. Put some chicken mixture, some chopped onion and some chilli-vinegar on one side of each prepared roti. Sprinkle some spice mix on top and roll it.
9. Wrap a butter paper around one side of each prepared rolls and serve hot.
