A simple Chicken clear soup, it is packed with flavour and is light on your tummies.CHICKEN CLEAR SOUPIngredients400 grams chicken carcass160 grams boneless chicken breast, cut into small cubes and boiled1 tbsp oil6-8 black peppercorns2 bay leaves2 cloves1 small onion, quartered½ medium carrot, cut into roundels2-3 celery stalk, cut into 2 piecesSalt to taste1 spring onion1 small carrot, peeled, cut into small cubes and boiled15-20 broccoli florets, boiled¼ cup chopped baby corn, boiledChopped spring onion greens for garnishChopped fresh red chillies for garnishMethod1. For making the stock, heat oil in a deep pan. Add black peppercorns, bay leaves, cloves and sauté till fragrant.2. Add onion, carrot, celery and sauté well. Add chicken carcass and add 8-10 cups water, salt, knot spring onion and add into the pan. Bring the mixture to a boil, reduce the heat and cook on low heat for 30-35 minutes. Discard the scum occasionally.3. Using a muslin cloth, strain the prepared stock into another pan. Let the mixture come to a boil. Take the pan off the heat.4. For serving one portion, add a portion of the carrot, a portion of the broccoli and a portion of the baby corn into a serving bowl. Add 40 grams of the chicken, sliced spring onion greens and fresh red chillies.5. Pour over the prepared stock over the vegetables and serve hot.
