A simple Chicken clear soup, it is packed with flavour and is light on your tummies.

CHICKEN CLEAR SOUP

Ingredients

400 grams chicken carcass
160 grams boneless chicken breast, cut into small cubes and boiled
1 tbsp oil
6-8 black peppercorns
2 bay leaves
2 cloves
1 small onion, quartered
½ medium carrot, cut into roundels
2-3 celery stalk, cut into 2 pieces
Salt to taste
1 spring onion
1 small carrot, peeled, cut into small cubes and boiled
15-20 broccoli florets, boiled
¼ cup chopped baby corn, boiled
Chopped spring onion greens for garnish
Chopped fresh red chillies for garnish

Method

1. For making the stock, heat oil in a deep pan. Add black peppercorns, bay leaves, cloves and sauté till fragrant.
2. Add onion, carrot, celery and sauté well. Add chicken carcass and add 8-10 cups water, salt, knot spring onion and add into the pan. Bring the mixture to a boil, reduce the heat and cook on low heat for 30-35 minutes. Discard the scum occasionally.
3. Using a muslin cloth, strain the prepared stock into another pan. Let the mixture come to a boil. Take the pan off the heat.
4. For serving one portion, add a portion of the carrot, a portion of the broccoli and a portion of the baby corn into a serving bowl. Add 40 grams of the chicken, sliced spring onion greens and fresh red chillies.
5. Pour over the prepared stock over the vegetables and serve hot.
