Chicken Cheese Melts | Sanjeev Kapoor Khazana

A mixture of chicken and cheese with mayo topped on toasted bread and baked.

CHICKEN CHEESE MELTS

Ingredients

250 grams boneless chicken, boiled and shredded
¼ cup cheese spread
2 tablespoons chopped spring onion greens + for garnishing
Crushed black peppercorns to taste
1 teaspoon red chilli flakes + for sprinkling
Salt to taste
8 white bread slices
Butter for spreading
Chopped garlic as required
Grated mozzarella cheese as required
Garlic oil for drizzling

Method

1. Take chicken in a bowl. Add cheese spread, 2 tablespoons spring onion greens, crushed peppercorns, 1 teaspoon chilli flakes and salt and mix well.
2. Cut bread slices into roundels using a medium size cookie cutter.
3. Spread some butter and some garlic on each roundel. Place them on a baking tray.
4. Put the tray into the preheated oven and bake for 2-3 minutes.
5. Put some chicken mixture on baked roundels and top with some cheese.
6. Put the tray back into the preheated oven and bake till the cheese melts.
7. Drizzle some garlic oil and sprinkle some chilli flakes on top and serve hot garnished with spring onion greens.
