Chicken Cashew Nut Soup

INGREDIENTS

2 cups fresh cashew nuts

7 chicken

1 large onion, pured.

1 tsp dried garlic leaves

1 tsp anise seeds

1 small ginger, grated.

4 cloves of garlic, minced.

A stalk of fresh rosemary

3 medium tomatoes, pured.

5 scotch bonnet pepper, blended.

1 tbsp salt



DIRECTION

Toast cashew nuts in a pan over medium heat for 5 minutes or until golden.
Let cool off and blend with 1 cup of water into a smooth mixture and set aside.
Pour chicken into a saucepan, add onion pure, garlic leaves, anise seeds, ginger, garlic, fresh rosemary, salt, stir, 2cups of water cover and let it boil for 10mins.
Add pured tomatoes, scotch bonnet pepper and let it boil for 7minuted then add blended cashew nuts mixture, salt, stir and let boil for 15-20 minutes.
Chicken Cashew nut soup ready to serve.
