Chicken Biryani Restaurant Style | Chicken Biryani Recipe by "Cooking with Asifa"
Ingredients:
Salt
Cloves 9
Tomato 2
Yogurt 1 cup
Green chili 3
Chicken 1/2 kg
Lemon 1/2 piece
Desi ghee 1 cup
Black pepper 15
Cinnamon stick 1
Black cardamom 1
Green cardamom 3
Red chili 1/2 tsp
Cumin seeds 1 tsp
Kewra water 1 tsp
Fresh mint 1 tbsp
Basmati rice 1 kg
Onion 2 medium size
Coriander powder 1 tsp
Dry Fenugreek leaves 1 tsp
Green chili chopped 1+1/2
Food color (yellow) 1/2 tsp
Fresh coriander leaves 1 tbsp
Ginger and garlic paste 2 tbsp
Recipe:
Heat 3/4 desi ghee with cloves, black cardamom, green cardamom, cinnamon stick, black pepper, cumin seeds, and fenugreek seeds.
Fry onions till it turns light brown & drains them out in a paper towel to set aside.
Cook chicken in the same oil till it turns golden brown, then take it out in a dish and set aside.
Add ginger garlic paste n chopped green chilies to cook for 5-10 minutes in the ghee.
Now again add chicken with yogurt, tomatoes, mint leaves, coriander leaves, turmeric powder, nutmeg n mace, salt & red chili powder in the ghee.
Add half of your fried onions into the chicken and cook for 10 minutes with covered lid.
In other pan simmer water & add salt with 2 tbsp oil & rice in it to boil.
Cook rice to about 80% doneness, which can be checked by pressing – the rice grain should still be raw in the middle.
After 10 minutes when chicken is cooked, add lemon in it and stir.
Take a cooking pan to add desi ghee with spoon and layer half of your rice, layer chicken over your rice.
Add another layer of rice and pour the remaining ghee with fried onions evenly spread coriander leaves & mint leaves all over your rice.
Mix food color with kewra water and put in one corner of rice.
Its time to give dum to your biryani.
Place your cooking pan over Tawa and set the flame on low heat. Cover your pan with aluminum and put the lid on it.
Now cook your biryani on dum for 15 minutes.
Now place burning coal in an aluminum bowl and put it in the middle of the rice and give dum for 5 minutes more.
Mix your rice evenly and dish out your Biryani!
