Chicken and Prawn Rice With Peppers | Sanjeev Kapoor Khazana

CHICKEN AND PRAWN RICE WITH PEPPERS

Ingredients

250 grams boneless chicken, cut into 1 inch pieces
8-10 medium prawns, shelled and deveined
1½ cups rice, soaked for 30 minutes and drained
1 medium yellow bell pepper, cut into cubes
1 medium green capsicum, cut into cubes
1 medium red bell pepper, cut into cubes
1 tablespoon butter
½ tablespoon oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 medium tomato, blanched, peeled and finely chopped
Salt to taste
1 teaspoon paprika
6-8 broccoli florets
3 cups chicken stock

Method

1. Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds.
2. Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well.
3. Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow bell pepper, green capsicum, red bell pepper, broccoli and chicken stock, mix and bring to a boil.
4. Add prawns, mix, cover and cook till rice is done.
5. Serve hot.
