"Kuzhi paniyaram (Tamil:குழி பணியாரம்) or Paddu (Kannadaಪಡ್ಡು) or Gunta Ponganalu (Teluguగుంట పొంగణాలు) or is an Indian dish made by steaming batter using a mould. The batter is made of black lentils and rice and is similar in composition to the batter used to make idli and dosa.”My cousin requested that I make low carbohydrates or zero carbohydrates - I am still researching for such recipes. But, what I can do is to share recipes which are relatively less oily - in fact you can make these Kuzhi Paniaram even oil-free if one has a non-stick Paniaram Mould. So here’s one more of my recipe, from my kitchen.Kuzhi PaniaramIngredients:Idli/dosa batter - 3 cupsOnions - 2 mediumGreen chilles - 2Oil - as requiredMustard seeds - ½ tspCumin seeds/jeera - ½ tspTurmeric powder - as required (optional)Bengal gram dal - ½ tspSalt to tasteCoriander leaves to garnishMethod:Chop the onions, green chillies and coriander leaves finelyIn a pan, heat oil and splutter mustard seeds and cumin seeds/jeeraNow, add the bengal gram dhal and fry till goldenIt’s time to add the finely chopped onions and green chilliesStir-fry everything till the onions are just translucentNow add everything to the idli/dosa batterAdd turmeric powder and salt as requiredBriskly mix everything together adding some water to adjust consistency - it should not be very thickHeat a Appam/paniaram mould and add few tsps of oil in each slotAdd few tbsps of the Paniaram batter in each slot and cook over simmer flame - close the Paniaram mould so that it cooks from withinAfter few minutes, flip the Paniarams and cook adding few more tsps of oilServe hot with sambhar or chutney
