A yummy accompaniment for sure!CHETTINAD FISH FRYIngredients2 large king fish (surmai) darnes1 tsp black peppercorns2 tsps cumin seeds2 tsps fennel seeds¼ cup coriander seeds10-12 pandi dried red chillies, stemmed ½ tsp asafoetida (hing)½ tsp turmeric powderSalt to taste½ cup shallots10-12 garlic clovesCoconut oil for shallow frying2 green chillies, slit10-15 curry leaves1 lemonMethod1. Heat a nonstick pan. Dry roast black peppercorns, cumin seeds, fennel seeds, coriander seeds, dried red chillies till fragrant.2. Add asafoetida, turmeric powder, salt and mix well. Take the pan off the heat and allow to cool.3. Transfer shallots in a blender jar. Add garlic, roasted spices and grind to a fine paste.4. Transfer the fish darnes in a plate and apply the prepared paste over them.5. Heat coconut oil on a nonstick tawa. Place the fish pieces, place some green chillies and curry leaves on the side and shallow fry for 4-5 minutes on medium heat. Flip and cook on other side for 4-5 minutes.6.
