Preheat oven to 180° C.2. Trim the potatoes horizontally from one side and scoop out the flesh of potatoes to make cavity.3. Place the potato shells on a baking tray. Sprinkle some salt and drizzle some olive oil. Put the tray into the preheated oven and bake for 15 minutes.4. To prepare stuffing, heat butter in a non-stick pan. Add onion and garlic and sauté for 1 minute. Add celery and mixed herbs and mix. 5. Add refined flour and sauté for 1 minute. Add milk, mix and cook till the mixture thickens, stirring continuously. 6. Add chicken, mix and cook till the chicken is half done. Add carrot, broccoli florets and green peas and mix. Add salt, mix and cook till chicken is fully done. Grate in cheese and mix well. 7. Put some stuffing into the baked potato shells. 8. Serve hot garnished with spring onion greens.
