A mixture of onion, cheese and spices stuffed between two bread slices and coated with breadcrumb and fried.CHEESY PANEER BREAD Ingredients¼ cup grated cheddar cheese¼ cup grated mozzarella cheese 200 grams cottage cheese (paneer), cut into 2 inch slices8 white bread slicesOil for deep-frying1 medium onion, finely chopped1 teaspoon red chilli flakes3-4 black olives, pitted and finely chopped1 tablespoon chopped garlic1 pickled jalapeno, finely chopped2 tablespoons chopped fresh coriander leavesSalt to tasteCrushed black peppercorns to taste3-4 tablespoons refined flourPanko breadcrumbs for coatingMethod1. Heat sufficient oil in a pan.2. Take onion in a bowl. Add chilli flakes, black olives, garlic, jalapenos, coriander leaves, cheddar cheese, mozzarella cheese, salt and crushed peppercorns and mix well.3. Trim off the edges of bread slices and roll them out using a rolling pin.4. Place one cottage cheese slice in the center of 4 out bread. Put some cheese mixture on top, apply some water on the edges and cover with remaining bread slices. Cut into triangles.5. Take flour in another bowl. Add some water and mix to make a smooth slurry.6. Take breadcrumbs on a plate.7. Dip each bread triangle in slurry and coat with breadcrumbs.8. Deep-fry bread triangles in hot oil till golden and crisp. Drain on absorbent paper.9.
