Cheesy Paneer Bread | Sanjeev Kapoor Khazana

A mixture of onion, cheese and spices stuffed between two bread slices and coated with breadcrumb and fried.

CHEESY PANEER BREAD

Ingredients

¼ cup grated cheddar cheese
¼ cup grated mozzarella cheese
200 grams cottage cheese (paneer), cut into 2 inch slices
8 white bread slices
Oil for deep-frying
1 medium onion, finely chopped
1 teaspoon red chilli flakes
3-4 black olives, pitted and finely chopped
1 tablespoon chopped garlic
1 pickled jalapeno, finely chopped
2 tablespoons chopped fresh coriander leaves
Salt to taste
Crushed black peppercorns to taste
3-4 tablespoons refined flour
Panko breadcrumbs for coating

Method

1. Heat sufficient oil in a pan.
2. Take onion in a bowl. Add chilli flakes, black olives, garlic, jalapenos, coriander leaves, cheddar cheese, mozzarella cheese, salt and crushed peppercorns and mix well.
3. Trim off the edges of bread slices and roll them out using a rolling pin.
4. Place one cottage cheese slice in the center of 4 out bread. Put some cheese mixture on top, apply some water on the edges and cover with remaining bread slices. Cut into triangles.
5. Take flour in another bowl. Add some water and mix to make a smooth slurry.
6. Take breadcrumbs on a plate.
7. Dip each bread triangle in slurry and coat with breadcrumbs.
8. Deep-fry bread triangles in hot oil till golden and crisp. Drain on absorbent paper.
9. Serve hot.
