When you got left over chicken tikka, just mix it with some cheese and spices, and make these deliciously cheese oozing spring rolls!CHEESY CHICKEN TIKKA SPRING ROLLSIngredients200 grams readymade chicken tikka, shredded½ cup grated mozzarella cheese1 tbsp oil + for deep frying2 tsps chopped garlic1 tsp chopped ginger2 green chillies, chopped2-3 spring onion bulbs, sliced¼ medium cabbage, shredded1 medium carrot, peeled and cut into thin stripsSalt to tasteWhite pepper powder to taste2 tbsps mayonnaise2-3 tbsps chopped spring onion greensRefined flour slurry as requiredSweet chilli sauce for servingMethod1. Heat oil in a shallow nonstick pan. Add garlic, ginger, green chillies and sauté till golden brown.2. Add spring onion bulbs, cabbage, carrot and sauté on high heat for 2 minutes.3. Add salt, white pepper powder and mix well. Transfer in a bowl and allow to cool slightly.4. Add chicken tikka, mayonnaise, spring onion greens and mix well. Add mozzarella cheese and mix well.5. Place spring roll sheets on a worktop and place a generous portion of stuffing in the centre, brush refined flour slurry on the edges and seal to form a cylinder.6. Heat sufficient oil in a kadai. Slide the prepared spring rolls and deep fry till golden brown and crisp. Drain on absorbent paper.7.
