Loads of cheese, mayo and veggies, this omelette is going to fill up your tummy easily.CHEESY BREAD OMLETTEIngredients8 eggs8 brown bread slices¾ cup grated processed cheese + for garnish7-8 green chillies, chopped6 tbsps freshly chopped coriander leaves + for garnish4 tbsps chopped onion1 large tomato, chopped1 tsp madras curry powder1 tsp Tata Sampann Turmeric Powder1 tsp red chilli powder4 tbsps butter4 tsps oilMayonnaise for drizzlingTomato-onion salad to serveMethod1. For one portion, break 2 eggs in a bowl. Add salt, a few green chillies, 1 tbsp chopped coriander, 1 tbsp chopped onion, a little chopped tomato, ¼ tsp madras curry powder, a pinch of Tata Sampann Turmeric Powder, a pinch of red chilli powder, and whisk using a fork. Set aside.2. Trim and discard the sides of 2 whole wheat bread slices and cut it into small cubes. Set aside.3. Heat 1 tbsp butter and 1 tsp oil in a non-stick shallow pan, let the butter melt. Add the egg mixture and cook for 1 minute. Add the bread cubes and cook till the base is cooked completely. 4. Loosen the sides and flip the omelette. Cook for 1-2 minutes. 5. Drizzle mayonnaise, add a portion of the grated processed cheese, 1 tbsp red capsicum, 1 tbsp green capsicum, 1 tbsp chopped tomato; ½ tbsp chopped coriander, and fold the omelette in half. Take it off the heat.6. Garnish with grated cheese and chopped coriander. Serve hot with tomato-onion salad.
