CHEESE EGGPLANT ROLLS: APPETIZING EGGPLANT MEZE

FULL RECIPE FOR CHEESE EGGPLANT ROLLS
Ingredients
2 large eggplants
cup olive oil
cup breadcrumbs
2 tbsp Parmesan cheese

Filling
4 tbsp of strained yogurt (by starting with 1 cup of yogurt)
1 tbsp pesto
1 tbsp goat cheese
tbsp. olive oil
tsp salt
2 garlic cloves
2 roasted bell peppers

PREPARATION
Prepare a bowl of salt water: Dissolve 1 tbsp of salt in 6 cups of water
Wash the eggplants.
Thinly slice the eggplants lengthwise.
Discard the excess skin of the two end slices,
Then, place the eggplant slices into the salt water. Make sure to submerge all the slices . Cover the bowl with a lid and set aside.
Let them soak for 50 to 60 minutes
Roughly drain the eggplants.
Then, dry each slice thoroughly using a kitchen towel
Mix cup of breadcrumbs and 2 tbsp of Parmesan cheese in a bowl
Pour cup of olive oil into a separate bowl
First, coat the eggplant slices with olive oil and cover them with the breadcrumbs and Parmesan cheese mixture
Cover an oven tray with parchment paper . Place the coated eggplants on the oven tray

BAKING
Bake the eggplants in a 400F (200C) oven for 40 minutes, until eggplants turn to a golden brown and become crispy

FILLING
Set a medium-sized bowl and a sieve. Cover the sieve with 2-3 layers of cheesecloth
Place 1 cup of yogurt in the sieve and cover it with a lid. Place the yogurt in a fridge for 3-4 hours, until the excess water has drained and yogurt has thick consistency
Note: You can also find strained (condensed) yogurt on the market
For the filling, mix tbsp. of salt, 1 tbsp of pesto, 1 tbsp of goat cheese, and 4 tbsp of strained yogurt in a bowl
Then, mince 2 garlic cloves and add to the filling
Finally, add tbsp. of olive oil and mix the ingredients to achieve a creamy and homogenous filling
You can bake the bell pepper in the oven or simply use a pickled roasted red pepper
Cut the peppers into ~2x15 cm strips
Put 2-3 slits on both ends of each strip and set aside

MAKING THE EGGPLANT ROLLS
Once the eggplants have cooled down, form the Eggplant Rolls
Place 1 red pepper strip on the end of the eggplant slice
Add 1 tbsp of cheese filling, then, roll the eggplant
Place the Eggplant Rolls on a serving plate

SERVING
Serve the Eggplant Rolls fresh and warm or cold
Eggplant Rolls are a simple but elegant side dish
