The combination of cheese and jalapenos in this parantha is unique and fabulous.

CHEESEAND JALAPENO PARANTHA

Ingredients

50 grams processed cheese
50 grams mozzarella cheese
1 fresh jalapenos
4-5 slices of pickled jalapenos
Ready-made parantha dough made with 1½ cups whole wheat flour
200 grams cottage cheese (paneer)
2 tbsps chopped fresh coriander leaves
Salt to taste
Crushed black peppercorns to taste
½ tsp red chilli flakes
Whole wheat flour for dusting
Tomato ketchup to serve

Method

1. Deseed and finely chop jalapenos. Finely chop pickled jalapenos.
2. To make the stuffing, grate cottage cheese in a large bowl. Grate processed cheese and mozzarella cheese directly into it. Add both the chopped jalapenos, coriander leaves, salt, crushed black peppercorns, and red chilli flakes and mix well.
3. Dust the worktop with some whole wheat flour, take a portion of the dough and shape it into a ball. Flatten it and roll it into a small disc. Place a generous portion of the cheese mixture and bring the edges to the centre and pinch to seal. Remove the excess dough. Dust the worktop with some whole wheat flour and shape the stuffed dough into a disc of medium thickness.
4. Heat a non-stick tawa. Place the disc on it and cook for 1-2 minutes. Flip, apply some oil and continue to cook for 1-2 minutes. Drizzle oil and cook for a minute.
5. Serve hot with tomato ketchup.
