CHEESEAND JALAPENO PARANTHAIngredients50 grams processed cheese50 grams mozzarella cheese1 fresh jalapenos4-5 slices of pickled jalapenosReady-made parantha dough made with 1½ cups whole wheat flour 200 grams cottage cheese (paneer)2 tbsps chopped fresh coriander leavesSalt to tasteCrushed black peppercorns to taste½ tsp red chilli flakesWhole wheat flour for dustingTomato ketchup to serveMethod1. Deseed and finely chop jalapenos. Finely chop pickled jalapenos.2. To make the stuffing, grate cottage cheese in a large bowl. Grate processed cheese and mozzarella cheese directly into it. Add both the chopped jalapenos, coriander leaves, salt, crushed black peppercorns, and red chilli flakes and mix well. 3. Dust the worktop with some whole wheat flour, take a portion of the dough and shape it into a ball. Flatten it and roll it into a small disc. Place a generous portion of the cheese mixture and bring the edges to the centre and pinch to seal. Remove the excess dough. Dust the worktop with some whole wheat flour and shape the stuffed dough into a disc of medium thickness. 4. Heat a non-stick tawa. Place the disc on it and cook for 1-2 minutes. Flip, apply some oil and continue to cook for 1-2 minutes. Drizzle oil and cook for a minute. 5.
