Cheese And Cucumber Canapes | Sanjeev Kapoor Khazana

These Cucumber-Cheese Canapés are a classic and easy-to-make teatime treat. Perfect for parties. A perfect appetizer.

CHEESE AND CUCUMBER CANAPES - (Serves - 4)

Ingredients

100 grams feta cheese
1 large cucumber
6-8 cherry tomatoes, cut into quarters
Salt to taste
Crushed black peppercorns to taste
1 tablespoon olive oil
3-4 black olives, pitted and finely chopped
1-2 pickled jalapenos, finely chopped
1 tablespoon chopped capers
2-3 cocktail onions, finely chopped
Basil leaves as required

Method

1. Preheat oven to 200° C.
2. Put cherry tomatoes in a baking tray. Add some salt, crushed peppercorns and olive oil and mix well. Put the tray into the preheated oven and roasted for 10-15 minutes.
3. Put feta cheese in a bowl and crumble using a fork. Add black olives, jalapenos, capers, cocktail onions and crushed peppercorn and mix well.
4. Fill a piping bag with the feta cheese mixture.
5. Trim the ends on the cucumber and cut into 1½ inch pieces and place them lengthwise.
6. Core the cucumber pieces to make a cavity and pipe out feta cheese mixture in it.
7. Halve the stuffed cucumber pieces lengthwise, place on a plate and further cut into 3 equal pieces.
8. Place the cucumber canapés on a serving platter. Place one basil leaf and roasted cherry tomato wedge on top and insert a toothpick to secure.
9. Serve.
