Chatpata Rajasthani Aloo Fry ! Jodhpuri Aloo Fry

Ingredients list
For Boiling potato
Potato (medium size) - 500g
Water
Salt - 1 tsp
For Frying
Oil - 1 tbsp
Asafoetida (hing) - 1/4 tsp
Cumin seeds - 1 tsp
Dry red chilli -2 no’s
Fennel seeds - 1 tsp
White sesame seeds -1 tsp
Turmeric powder -1/4 tsp
Red chilli powder -1/2 tsp
Salt to taste
Dry mango (amchur) powder - 1 tsp
Chilli flakes -1 tsp
Coriander leaves (finely chopped) - 1 tbsp

How to make Chatpata Rajasthani Aloo Fry
1. To begin making the Chatpata Rajasthani Aloo Fry / Jodhpuri Aloo Recipe, wash and boil the potatoes for about 20 minutes or until they are well cooked. Peel the skin, cut them into halves and keep aside. Potato can be Pressure cook also. If using baby potatoes, you need not cut the potatoes, else make small cubes.
2. Heat a nonstick pan with cooking oil and temper with cumin seed, fennel, sesame seeds, hing and whole red chilli.
3. Fry the potato on medium heat for 2 min
4. Add turmeric powder & red chilli powder.
5. Saute for two minutes
6. Add salt as per taste.
7. Toss well and simmer for a few mins.
8. Now, add amchur powder and chilli flakes, combine well and switch off the heat. Garnish with coriander leaves and serve hot.
9. Serve Chatpata Rajasthani Aloo Fry / Jodhpuri Aloo with rice and Dal.
