Sweet & Teekhi Chaat
Ingredients for Phulki:
Gram flour 2 ¼ cup
Baking powder 2 tsp
Salt 1 tsp
Turmeric powder 1 tsp
Water as required
Oil (for frying) as required
Water (for soaking) as required

Ingredients for Yogurt Mixture:
Yogurt 2 cups
Salt 1/2 tsp
Powdered sugar 1 tbsp

Ingredients for Sweet & Sour Chutney:
Tamarind pulp 1 cup
Jaggery powder 1/2 cup
Lemon juice 2 tbsp
Salt to taste
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Red chili flakes 1 tsp
Black pepper powder 1/2 tsp

Ingredients for Assembling:
Soaked phulki 2 cups
Boiled potatoes (cube cut) 1 cup
Onion (thinly sliced) as required
Tomatoes (small cubes) 1/2 cup
Cabbage (shredded) as required
Chaat masala as required
Red chili flakes 1/2 tsp
Yogurt mixture as required
Green chutney as required
Sweet & sour chutney as required
Cabbage (shredded) for garnish
Tomatoes (small cubes) for garnish

Directions for Phulki Preparation:
In a bowl add gram flour, salt, baking powder, turmeric powder and mix well. Now add water and make phulki batter. Let it rest for 15-20 minutes.
Heat oil in a fry pan and drizzle prepared batter in oil. Fry until golden brown phulki are prepared.
Let it cool on room temperature and soak in water until soft.
Directions for Yogurt Mixture Preparation:
In a bowl add yogurt, salt and powdered sugar. Mix well and set aside.
Directions for Sweet & Sour Chutney:
In a blender add tamarind pulp, jaggery powder, lemon juice, salt, cumin seeds, fennel seeds, red chili flakes, black pepper powder and blend well. Your sweet & sour chutney is ready.
Directions for Assembling:
In a bowl add prepared phulki, boiled potatoes, onion, tomatoes, cabbage, chaat masala, red chili flakes and mix well.
Drizzle yogurt mixture on top, green chutney, sweet & sour chutney, cabbage, tomato and lastly top with Kurkure. Your Sweet & Teekhi Chaat is ready to serve.
