A South African delicacy, a flavor and veggie packed recipe delivering both taste and nutrients.

CHAKALAKA

Ingredients

1 cup baked beans
2 medium carrots, peeled
1 medium onion, peeled
½ medium red capsicum
½ medium green capsicum
1 tbsp oil
2 tsps finely chopped garlic
2 medium tomatoes, finely chopped
¼ cup tomato puree
1 green chilli, chopped
Salt to taste
Crushed black peppercorns to taste
2 tsps curry powder
Parsley sprig for garnish

Method

1. Grate carrots and set aside, chop onion and set aside.
2. Dice red capsicum and green capsicum, set aside.
3. Heat oil in a non-stick pan; add chopped garlic and sauté for a few seconds. Add the chopped onion and sauté till translucent.
4. Add tomatoes and tomato puree, mix well. Cook for 1-2 minutes.
5. Add the grated carrots, green chilli, salt, crushed black peppercorns, curry powder and mix well.
6. Add the diced capsicums and mix, cook for minute. Add baked beans and ¾ cup water. Mix well. Cook for 1-2 minutes and take the pan off the heat.
7. Transfer into a serving bowl, garnish with parsley sprig. Serve hot.
