A South African delicacy, a flavor and veggie packed recipe delivering both taste and nutrients.CHAKALAKAIngredients1 cup baked beans2 medium carrots, peeled1 medium onion, peeled½ medium red capsicum½ medium green capsicum1 tbsp oil2 tsps finely chopped garlic2 medium tomatoes, finely chopped¼ cup tomato puree1 green chilli, choppedSalt to tasteCrushed black peppercorns to taste2 tsps curry powderParsley sprig for garnishMethod1. Grate carrots and set aside, chop onion and set aside. 2. Dice red capsicum and green capsicum, set aside.3. Heat oil in a non-stick pan; add chopped garlic and sauté for a few seconds. Add the chopped onion and sauté till translucent.4. Add tomatoes and tomato puree, mix well. Cook for 1-2 minutes. 5. Add the grated carrots, green chilli, salt, crushed black peppercorns, curry powder and mix well.6. Add the diced capsicums and mix, cook for minute. Add baked beans and ¾ cup water. Mix well. Cook for 1-2 minutes and take the pan off the heat.7. Transfer into a serving bowl, garnish with parsley sprig.
