Rice and whole moong cooked with yogurt to make a delicious Gujarati-style khichdi.

CHAASWALI KHICHDI

Ingredients

3 cups buttermilk (chaas)
1½ cups whole green gram (sabut moong), soaked for 3-4 hours
1 cup rice, soaked for ½ hour
3 tbsps ghee
1½ tsps cumin seeds
3-4 cloves
3-4 green chillies, slit
¼ cup chopped green garlic
½ tsp turmeric powder
Salt to taste
Ghee for drizzling

Method

1. Heat ghee in a pressure cooker, add cumin seeds and let them change colour. Add cloves, green chillies and chopped green garlic and sauté well.
2. Add turmeric powder and sauté for a minute. Add green gram and rice, mix well.
3. Add salt and buttermilk and mix. Cover with a lid and cook for 4-5 whistles are given out.
4. Open the cooker once the pressure is reduced completely, mix and mash the khichdi with the back of the spoon and transfer on to a serving plate.
5. Drizzle ghee and serve hot.
