Todays menu is Japanese style glazed chestnut from the movie Little Forest.
It is a little bit different from the usual candied chestnuts because we keep the soft inner peel.
I thought it was a simple menu when I watched the movie, but it turns out it was a lot of work to make it.
It took 2 days to make: to remove the skin and boil many times, but its worth it because its delicious. I want to make it again.
Actually, I made this a few weeks ago. In the movie, they make it in fall when chestnuts are in season and eat it in winter so I tried the same.
The chestnuts are chewier after maturing for about a month. Great winter snack with tea!

* Ingredients

chestnuts(marron), sugar(60% the weight of the chestnuts), a little of brandy(*optional), 1tsp baking soda

* Recipe

1. Remove the tough shells of the chestnuts.

2. In a pot, add water, chestnuts and baking soda and soak overnight.

3. Next day, boil the same chestnut and water for 30min.

4. Drain, add water and boil again for 30min.

Repeat process(4) 4 to 5 times until boiling water is clear wine color.

5. Remove the fuzz and tough string on the chestnuts. And then, add chestnuts, water and sugar in a pot and boil.

The movie said to use 60% the weight of the chestnuts for sugar, but I think it is subject to preference.

6. When the pot content is reduced a bit, add a bit of brandy, bring to a boil and we are done.
