The healthy rotis along with a bowl of low-fat curds and khichdi makes a complete nourishing meal for diabetics and people with heart disease. Preparation Time: 10 minutesCooking Time: 25 minutesMakes 8 servingsIngredients1 cup jowar (white millet) flour1/4 cup finely chopped fenugreek (methi) leaves1/4 cup chopped coriander (dhania)1/4 cup grated cauliflower2 tsp finely chopped green chilliessalt to tastejowar (white millet) flour for rolling2 tsp oil for cookingFor Servingfresh low-fat curdMethod1. Combine all the ingredients in a bowl and knead into a soft dough using enough water.2. Divide the dough into 8 equal portions and roll out each portion into a 75 mm. (3") diameter circle, using a little jowar flour.3. Heat a non-stick tava (griddle) and cook the roti, using ΒΌ tsp of oil, till brown spots appear on both the sides.4. Repeat with the remaining portions to make 7 more rotis.5. Serve hot with fresh low-fat curds.
