It's also great for any holiday festivities as well.Ingredients:1 large head of cauliflower, rinsed, dried, cut into florets6 slices of bacon, cooked, crumbled or cut into small pieces.1 cup Greek yogurt, 2%3/4 cup mild cheddar cheese, grated2 tsp. balsamic vinegar, good quality1 Tbsp. chives, choppedpinch of salt2 -3 Tbsp. olive oilDirections:Preheat oven to 450 degrees F.Coat the florets in a bowl with olive oil and a little salt. Spread them out on a baking sheet lined with foil for easy clean up. Make sure that each florets touches the bottom of the baking pan.Roast for 10 to 15 minutes or until the florets turn brown and caramelize a bit.Take them out of the oven and turn the florets over and then place back in the oven for an additional 10 to 15 minutes longer, until golden brown.Let them cool slightly while you combine the following:In a large bowl and combine the yogurt and balsamic vinegar. Chop the bacon into small pieces and add them to the bowl.Add the chopped chives and stir to combine. Then add the florets and stir until they are well coated.Pour the mixture out into an 8 x 8 baking dish.
