A mixture of boiled and mashed chickpeas and grated cauliflower flavoured with spices, coated with crumbs and shallow fried. CAULIFLOWER CHICKPEA TIKKIIngredients½ medium cauliflower, grated1 cup chickpea, soaked overnight and boiledSalt to taste1 teaspoon red chilli powder1 tablespoon chopped garlic1 medium onion, finely chopped½ medium red bell pepper, finely chopped1 teaspoon cumin seedsPanko breadcrumbs for coatingOil for shallow-frying2-3 tablespoons tomato ketchupChaat masala for sprinklingChopped fresh coriander leaves for garnishingMixed micro greens for garnishingMethod1. Take chickpeas in a bowl and mash. Add cauliflower, salt, chilli powder, garlic, onion, red bell pepper and cumin seeds and mix. Add cheese and mix well. 2. Divide the mixture into equal portions and shape into tikkis. 3. Coat the tikkis with breadcrumbs. 4. Heat some oil in a non-stick pan. Shallow-fry tikkis from both sides till golden and crisp. Drain on absorbent paper.5. Pour tomato ketchup in a serving bowl and pile fried tikkis on top. Sprinkle some chaat masala and garnish with some coriander leaves and micro greens.6.
