Food blogger Tarika Singh is up with the recipe for a satisfying soup that is healthy, easy to make, and delicately spiced. Check out her take on this winter's special, creamy carrot soup.

Carrot Soup Ingredients:
1 tbsp olive oil
1/2 of medium-sized onion - finely chopped
2 cloves of garlic - minced
small piece of ginger
1/4 tsp chili flakes
450 grams of carrot - peeled and sliced up
vegetable stock
pinch of salt
coconut milk
salt and pepper to taste

Method:
- Heat the olive oil in a pan.
- Add the onion and saute it in the oil. Cook the onion until they are translucent.
- Add the minced garlic and grate a small piece of ginger into the oil.
- Add the chili flakes.
- Add the carrots and coat them with olive oil and the rest of the ingredients. Give it a good stir and let it cook slightly with the aromatics in the pan.
- Slowly add the vegetable stock to the carrots and a pinch of salt and mix well.
- Turn the heat down to low and cover the pressure cooker with a lid, As you shut the lid, put the flame on high and give it two whistles.
- Once the steam escapes the pressure cooker completely, take off the lid and let it cool down for about 10 minutes.
- Using a blender, blend the carrots.
- Put it back on the heat and cook it slightly with coconut milk. Add cracked pepper and salt to it and mix well.
- The delicious carrot soup is ready to be served.
