CARROT FRY RECIPE | CARROT VEPUDU | HOW TO COOK CARROT FRY RECIPE

INGREDIENTS
1. Carrots - 1/2 Kg
2. Onions - 1
3. Green Chillies - 2
4. Curry Leaves - 1/2 Cup
5. Chilli Powder - 1 1/2 Teaspoon
6. Turmeric Powder - 1/2 Teaspoon
7. Ginger Garlic Paste - 1 1/2 Teaspoon
8. Coriander Seeds Powder - 1 Teaspoon
9. Salt - 1 Teaspoon
10. Coconut Powder - 2 Tablespoons
11. Cumin Seeds - 1 Teaspoon
12. Mustard Seeds - 1 Teaspoon
13. Bengal Gram - 1 Tablespoon
14. Black Gram - 1 Tablespoon

Here I peeled and chopped the carrots
Smaller size of the carrot pieces decreases the cooking time
Heat 2 tablespoons oil in pan
Add cumin seeds, mustard seeds, bengal gram, black gram and stir
Add diced onions and fry
As onions become transparent. Add green chillies and curry leaves
Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and fry
Add carrot pieces and fry
Close lid and cook for 5 minutes
Stir and cook till carrot pieces fry
Cook on low flame
After carrot pieces cook completely, add 1 1/2 teaspoon chilli powder, 1 teaspoon salt or salt or to taste, 1 teaspoon coriander seeds powder, 2 tablespoons coconut powder and stir
Coconut powder gives a nice flavour to the carrots
Close lid and cook for 5-6 minutes on low flame
Serve with roti or rice.
