Spread the love! :)Download our App - http://bit.ly/DownloadIndiaFoodNetworkAppCarrot Coconut Barfi:Ingredients:1 tablespoon Ghee, plus extra for greasing2-3 Carrots, grated1 Coconut, grated1 cup Sugar, or as required1 teaspoon Cardamom PowderCashew Nuts, handful sliced in halfMethod:In a deep pan add some ghee & carrots and heat it well. Keep mixing till the carrots cook. Once the carrots become soft add the coconut and mix again. Then add the sugar and mix again. The mixture will become soft & release a little water.Then add cardamom powder and mix again. Take a baking tray and grease it with ghee. Empty the mixture onto the pan and spread it well. Cut the mixture into desired shapes & sizes. Top it with chopped cashew nuts. Enjoy!
