Gadgets like a food processor don’t make you think twice of evil pleasures like a carrot cake!This Carrot cake is special because of the absence of eggs and oven! But it’s a freshly baked cake!! How?!!!!Hop into Sujan Fun Kitchen for this year, 2022’s first recipe, Carrot Cake.Ingredients:Grated carrot - ½ cupAll purpose flour/maida - 1 cupOdourless oil - ¼ cupCurd - ¾ cupMilk - ¼ cupSugar - ½ cupChopped dates - 1 handfulBaking powder - ½ tspBaking soda - ½ tspVanilla essence - ½ tspMethod:Take a heavy bottomed pressure cooker or a deep panPlace a stand into the cooker/panAdd salt to cover the bottom of the cooker/panPreheat over medium heat for 15 mins, removing the gasket and weightIf baking in a deep pan, ensure that the lid is tightMeanwhile sieve all the dry ingredients- maida, baking powder and baking sodaAdd the sugar Now add all the other liquid ingredients and briskly mix well together Transfer the Carrot cake batter to a greased aluminium tin preferably layered with butter paper or without the paperPlace the cake tin carefully into the preheated cooker/panSimmer the flame to the lowest Bake for 40 mins or till cooked - a toothpick can be used to check if the Carror Cake is doneOnce done, remove the cake Tin and allow to come to room temperature Then,demold the Carrot Cake and cut and serveIf using OTG, preheat to 180 C and bake for 35 or 40 mins or till cookedPl check after 30 or 35 mins - each cooker or each OTG is differenthttps://sujankitchen.wordpress.com/2022/01/24/eggless-ovenless-carrot-cake/
