Carrot Cake Cookies - Gluten, Dairy & Egg Free Cooking with Kids

These delicious Carrot Cake Oat Cookies are gluten free and are made with no diary or eggs. They're really easy to make too, perfect for getting the kids involved in baking!

Ingredients:
125g / 4oz coconut oil, melted
50g / 2 oz sugar
1/2 tsp vanilla extract
125g / 4.5oz gluten free plain flour
125g / 4.5oz rolled oats
1/4 tsp bicarbonate of soda
1/2 tsp cinnamon
1 large carrot, grated

To decorate: icing sugar mixed with water
