Carrot Burfi recipe - Gajar Ki Burfi Recipe | Nisha Madhulika

Gajar barfi is a classic and great Indian dessert prepared with fresh carrots, mawa and milk. The divine taste of carrot barfi makes a perfect dessert for all occasions or party.

Ingredients

Carrots – 500 grams (1/2 kg)
Mawa – 250 grams
Sugar – 1 cup
Cashews – ½ cup (powdered)
Ghee – 2 tbsp
Cashews – 8-10
Pistachios – 8-10
Green cardamom – 5-6
Full cream milk – 1 cup

Directions

Getting ready:

1. Peel and grate the carrots manually with a grater. Slice the pistachios and chop the cashews, keep them in separate bowls. Finely crush the green cardamom seeds using mortar pestle.

Making:

2.Start making carrot barfi by adding carrot in boiling milk and cook in open for few minutes. Add ghee in the carrot mixture and cook by stirring constantly for 3 to 4 minutes.

3.Later, add sugar and mawa in the mixture and cook by stirring constantly until the halwa becomes dense. Afterward, add cashew powder, chopped cashews and crushed green cardamom in the barfi mixture and mix everything really well.

4.Turn off the flame, transfer and evenly spread the barfi mixture on the greased plate then sprinkle some cashews and pistachios on the mixture. Press them slightly and let the mixture set completely. Thereafter, cut the barfi into desired size pieces and transfer them on a plate. Carrot barfi is ready.

Serving:

5.Serve these mouth-watering carrot barfi anytime in a day.

Suggestion

You can use coconut powder instead of cashew powder.
