Carne Asada Bowl Recipe
Ingredients:

Marinade:
2 lemons, juiced
2 limes, juiced,
Zest from 1 of the limes
3 oranges, juiced
1 tsp. Smoked paprika
1 tsp. Ancho chile powder
tsp. Ground cumin
2 Tbsp. apple cider vinegar
3 Tbsp. brown sugar
2 tsp. Salt
1 tsp. Garlic powder
1 tsp. Chili powder
4 green onion, sliced
3 cloves garlic, minced
cup olive oil
1 handful of cilantro, chopped

1 skirt steak, grass fed
2 yellow onions, sliced into thick slices
Olive oil

Other ingredients:
Cilantro lime rice
1 can black beans
1 can organic corn
Grated cheddar cheese
Guacamole
Sour cream


Directions:
In a 9 x 13 dish combine all of the marinade ingredients and mix to combine. Add the skirt steak and submerge in the marinade and marinate for a minimum 1 hour and up to 8 hours.

Place a large frying cast iron pan over medium high heat. Add 1 tbsp. Of olive oil in the pan along with the sliced onion. Season with a touch of salt. Cook the onions between 12 and 15 minutes or until they are golden brown. Set aside and keep warm.

Heat the black beans and corn in sauce pans and prepare the cilantro lime rice and guacamole.
When its time to grill the skirt steak, preheat the grill to medium high heat. Place the beef on the grill and cook each side for 2 to 2 minutes. Let the steak rest for 5 - 10 minutes before slicing.

Be sure to slice the steak across the grain. The steak will be more tender.

Have all your condiments layed out and warm so you and your guests can assemble your bowls. To start a bowl, begin with the cilantro lime rice, then add some black beans, corn, grilled onion, then a good amount of the skirt steak, a squirt of sour cream, a dollop of guacamole and finish with a sprinkle of cheese.
