Caramel Cheesecake
Servings: 2

INGREDIENTS
50g crackers
40g melted butter
200g cream cheese (at room temperature)
70g granulated sugar
2 eggs
2 tablespoons potato starch
200ml heavy cream

3 tablespoons granulated sugar
2 tablespoons water

PREPARATION
1. With a rolling pin, crush the crackers in a zipped bag. Add melted butter into the bag and mix well. Put the buttered cracker crumbs into a cake mold and press to flatten.

2. Mix cream cheese and granulated sugar in a bowl.

3. Add eggs, potato starch, and heavy cream into the bowl (2) and mix well.

4. Pour (3) into the cake mold (1). Place the mold on a baking tray. Pour hot water into the tray. Bake in the oven (170C) for 50 minutes.

5. Let the cake cool. Remove from the mold.

6. Put granulated sugar and water (A) into a pot and caramelize. Pour over the cake.

7. Enjoy!
