Cappuccino Mug Cakes | Sanjeev Kapoor Khazana

Coffee flavoured cake batter baked in mugs topped with caramel sauce.

CAPPUCCINO MUG CAKES

Ingredients

2 tablespoons black coffee decoction
125 grams butter
125 grams brown sugar
2 eggs
125 grams refined flour
1 teaspoon baking powder
Caramel sauce
125 grams castor sugar
150 ml fresh cream
1 tablespoon vanilla essence
1 tablespoon coffee decoction

Method

1. Preheat oven at 180ºC.
2. Cream together butter and sugar in a bowl. Add eggs and whisk well. Add 2 tablespoons coffee decoction and mix well. Add refined flour and baking powder and fold well.
3. Fill in the ovenproof coffee mugs with some prepared batter. Put the mugs on a baking tray and fill in the baking tray with some hot water. Place the baking tray in preheated oven and bake for 30 minutes.
4. To prepare caramel sauce, heat castor sugar and 75 ml water in a non-stick pan, mix and cook on low heat till sugar melts. Cook on high heat till it caramelizes. Add cream, vanilla essence and coffee decoction and mix well.Pour the caramel sauce into the mug cakes.
5. Take cream in a bowl, whisk lightly and top some over the mug cakes.Serve.

Preparation Time: 15-20 minutes
Cooking Time: 45-50 minutes
