Calcutta Mutton BiryaniINGREDIENTS:Mutton - 500gmsGinger garlic paste - 2 tspOil - As requiredSalt - As per taste Water - As requiredMilk - 500mlYogurt - 1 cupChilli powder - 1 tspGaram masala Powder - 1 tspRose essence - 1 tspKewra water - 1 tspMint leaves - 1 cupPeppercorns - 10 nos.Shahi jeera - 1 tspWhole garam masala - 2 tspKebab chini - 1 tsp Basmati rice - 1 cupSaffron water - 1 tspKewra water - 1 tspRose essence - 1 tspMint leaves - 1 bunchPlumps - 5 nos.Coriander leaves - 1 bunchBrown onion - 1 cupLime juice - 1 tspDIRECTIONS:Heat oil in a pan,add ginger garlic paste, brown onion paste saute it and until all the raw flavors are gone.Then add mutton pieces, salt & water cook it for 30 minutes with the lid closed, and add some milk, yogurt, chilli powder, garam masala powder, salt, boiled potatoes cook till they are soft. Now add rose essence, add kewra water, mint leaves, plums to it and cook it for some more time.Heat hot water in a pan, add oil, salt, peppercorns, shahi jeera, whole garam masala, kebab chini, soaked basmati rice mix it once and cook it till its 70% done. At last, add boiled rice, saffron water, coriander leaves, brown onions, lime juice and keep it on dum on a slow flame for 15-20 minutes.
