Caesar Deviled Eggs | Sanjeev Kapoor Khazana

CAESAR DEVILED EGGS

Ingredients

4 eggs, hardboiled and peeled
1 tablespoon chopped garlic
1 teaspoon chopped capers
1 teaspoon mayonnaise
1 teaspoon red wine vinegar
1 teaspoon parmesan cheese powder
1 tablespoon olive oil
Salt to taste
Crushed black peppercorns to taste
2-3 Roman lettuce leaves, torn

Method

1. Halve eggs, separate yolks in a bowl and whites in a serving platter.
2. Mash egg yolks. Add garlic, capers and whisk using an electric beater. Add mayonnaise and mix well.
3. Add red wine vinegar and whisk. Add parmesan cheese powder and whisk again. Add olive oil and whisk. Add 1 tablespoon water and whisk well.
4. Add salt and crushed peppercorns and whisk well.
5. Fill a piping bag fitted with star nozzle with yolk mixture. Pipe out into the egg white shells and place a torn lettuce leaf in each shell.
6. Serve immediately.
