Burnt Garlic Fried Rice The Wok Street Chef Ankit Sanjeev Kapoor Khazana

This is what you do with the residue after making the burnt garlic oil. This fantastic fried rice with burnt garlic and chicken is a lip-smacking spicy preparation.

BURNT GARLIC FRIED RICE

Ingredients

4 tbsps burnt garlic + for garnish
3 cups cooked short grain rice
250 grams Chinese cabbage
1 medium green capsicum
1 spring onion
1 boneless chicken breast
2-3 tbsps garlic oil
1 tbsp finely chopped ginger
2 tbsps finely chopped garlic
2-3 green chillies, diagonally sliced
1 small carrot, cut into inch cubes
Salt to taste
Black pepper powder to taste
2 tsps soy sauce
3 tsps vinegar

Method

1. Finely chop the Chinese cabbage. De-seed the capsicum and finely chop it. Diagonally slice the spring onion greens and finely chop the spring onion bulb.
2. Finely chop the chicken breast.
3. Heat garlic oil in a wok, add ginger, garlic, and green chillies and saut for 1 minute. Add spring onion and carrot and saut for 1 minute.
4. Add chicken and saut on high heat for 3-4 minutes. Add the cabbage and capsicum and mix well.
5. Toss in the rice. Add salt, black pepper powder, and brunt garlic and mix well. Add the soy sauce, and vinegar and mix well.
6. Add of the spring onion greens and mix well. Transfer the rice into a serving bowl. Serve hot garnished with remaining spring onion greens.
