BURMESE KHOW SUEY

Ingredients

2 boneless chicken breasts, cut into thin strips
1 cup boiled noodles
1 tablespoon oil
1 small onion, finely chopped
2-3 spring onions, finely chopped
1½ teaspoons ginger-garlic paste
1 lemon grass stalk, finely chopped
½ medium red capsicum, finely chopped
½ medium yellow capsicum, finely chopped
6-8 button mushrooms, sliced
4-6 babycorn, halved and parboiled
1 teaspoon cumin powder
1 teaspoon coriander powder
2½ cups coconut milk
Salt to taste
1 teaspoon sugar
2 tablespoons roasted gram flour (besan)
Finely chopped coriander leaves for garnishing
Lemon juice for drizzling


Method
1. Heat oil in a non-stick pan, add onion and sauté till translucent.
2. Add spring onion bulbs and sauté further for a minute.
3. Add lemon grass and sauté further 2-3 minutes.
4. Add chicken and cook on high heat for 4-5 minutes.
5. Add red and yellow capsicums and mix well.
6. Add mushrooms, cumin powder and coriander powder and mix well.
7. Add babycorn and mix well. Cook on medium heat till done.
8. Mix gram flour and some of the coconut milk from the pan in a small bowl till smooth..
9. Add this paste to the pan and mix well. Cook for 5-8 minutes.
10. Turn off the heat.
11. Place the boiled noodles on a serving plate, pour khow suey over it, garnish with spring onion greens, coriander leaves, drizzle lemon juice and serve immediately.
