Recipe Details:
Dahi ki Gujia
Dhule urad dal / mash ki dal / split black lentil: 1.5cups

For tadka:
⦁ Crushed mustard: 1 tbsp
⦁ Asafetida: 1/4 tsp
⦁ Oil: 1/2 tsp

For stuffing:
⦁ Chironji (or charoli): 1 tsp
⦁ Dry coconut powder: 1 tbsp
⦁ Chopped raisins: 1tsp
⦁ Chopped cashews: 1tsp

For garnishing:
⦁ Thick and smooth curd: 1 cup
⦁ Sweet tamarind chutney: 1/4 cup
⦁ Sugar: 1spoon
⦁ Salt to taste
⦁ Zeera powder: 1/2 tsp
⦁ chaat masala: 1/2 tsp
⦁ Red chilli powder: 1/2 tsp
⦁ Coriander leaves: 1 tbsp chopped

Method:
⦁ Wash and soak dal over night or for 8 hours
⦁ Drain the water out and keep dal aside for 1/2 hour in strainer.
⦁ Grind soaked dal to thick smooth paste without adding water.
⦁ Divide dal in two parts.
For Dahi ki Gujia
⦁ Take one part add a pinch of red chilli power.
⦁ Mix well and take a small size ball.
⦁ Flatten it on wet cotton cloth as shown.
⦁ Put stuffing on one side.
⦁ Cover as shown in video. Pick gently with wet hands.
⦁ Fry them in medium hot oil till crisp.
⦁ Soak in water seasoned with salt and hing.
⦁ Let them soak at least for 1-2 hours or till soft.

For Bara (vada):
⦁ Take a bowl full of normal water.
⦁ Heat tadka pan with 1/2 tsp oil.
⦁ Add hing and crushed mustard.
⦁ Add tadka to water and also add some salt.
⦁ Now Take the second dal paste.
⦁ Mix chilli powder.
⦁ With wet hands make small size ball.
⦁ Flatten thin on wet cloth.
⦁ Gently pick with wet hands.
⦁ Fry in medium hot oil till crisp and golden brown.
⦁ Soak in tadka water for at least 1 hour. More is better.

Serving dahi ki ghujia:
⦁ Take curd mix salt, sugar.
⦁ Take ghujia and gently squeeze out the extra water.
⦁ Soak in the curd and take it out on serving plate.
⦁ Garnish with sweet chutney, chilly, sat, cumin, chaat masala and coriander leaves.
Serving Vadas
⦁ Take vada squeeze extra water.
⦁ Garnish with some sweet chutney, sprinkle some chilli powder.
