BULGUR PILAF WITH OKRA RECIPE - A perfect meal for a hot day!

In this episode, I'd like to share with you my 'Bulgur Pilaf With Okra' recipe. We love eating this meal, it tastes so delicious and easy to prepare. Also, sauteeing okra in pan, reduces the slime. INGREDIENTS
250 gr. (1/2 pound) Okra (Lady's-finger)
1 cup coarse bulgur
2 cups hot water
2-3 small tomatoes
1 onion
1 clove garlic (peeled)
1/2 lemon
4-5 sprigs green onion
A pinch of sweet paprika
1/2 tsp granulated sugar
Olive oil
Salt & pepper

DIRECTIONS
Peel the onion and chop into cubes, set aside.
Chop green onions finely, set aside.
Rinse the tomatoes, remove stems then chop coarsely.
Puree in a blender, set aside.
Rinse and drain bulgur, set aside.
Rinse and drain the okra.
Cut off the stems.
Cut each okra into 2-3 pieces, diagonally.
Make sure to cut off any bad-looking tip ends.
Combine 3-4 tbsp olive oil and 1 clove sliced garlic in a large pan, heat up over medium low heat.
Once sizzling, remove garlic slices, add the okra.
Sprinkle a pinch of salt and black pepper then sautee for about 5-6 minutes or until the slime dries up, stirring constantly.
Transfer into a bowl, set aside.
Heat 3-4 tbsp olive oil in the pan, add the onion.
Sprinkle a pinch of salt and pepper.
Sautee for about 5-6 minutes or until tender, stirring occasionally.
Sprinkle a pinch of sweet paprika, mix.
Add pureed tomatoes, sprinkle 1/2 tsp sugar, mix and cook for about 1-2 minutes.
Add bulgur, sprinkle 1 tsp or to taste salt, a pinch of black pepper and mix well.
Add the okra back to the pan, mix gently.
Add 2 cups hot water and mix gently, bring to a boil.
Reduce heat to the lowest possible setting, cover and cook for about 13-14 minutes, or until the water has evaporated.
Check for doneness then turn off the heat.
Cover pan with paper towels then the lid, and let rest for about 10 minutes.
Add freshly squeezed 1/2 lemon juice on top.
Add green onions, reserving some for garnishing.
Mix gently and transfer into a serving plate.
Garnish with green onions then serve.
