BULGUR CRUST PIZZA RECIPE

In this episode, I'd like to share with you my bulgur crust pizza recipe. It has a low glycemic index, yet so delicious and keeps your energy level high. we loved this pizza when we tried it. I hope you give it a try! It is also kids friendly!

INGREDIENTS

2 cups fine bulgur
1 cup hot water
2 tbsp butter (at room temp)
2 eggs
Salt & black pepper
Olive oil
1 cup tomato sauce
1 cup cheese (shredded)

For the Toppings: Whatever Your Heart Desires

DIRECTIONS

Transfer bulgur into a bowl.
Sprinkle a pinch of salt and mix.
Add 1 cup of hot water and mix.
Cover and set aside for about 20 minutes, stirring occasionally.
Preheat the oven to 180C (360F)
Grease a large oven tray and line with parchment paper.
Transfer the softened bulgur into the prepared tray.
Add butter, a pinch of salt and drizzle with olive oil (2-3 tbsp)
Add 2 eggs and knead for about 3-4 minutes, until well combined.
When the dough holds, gently spread the mixture evenly.
Then flatten it.
You may wet your hands, to work easily.
Make sure not to raise the edges, so they don't burn while baking.
Bake for 10 minutes and let cool.
Raise the oven to 200C. (400F)
Spread tomato sauce over the crust, especially the edges.
For the sauce, I cooked couple blended tomatoes in olive oil for about 15 minutes with dried basil, thyme, salt, blackpepper, sugar and water.
Sprinkle shredded cheese.
And add the toppings, whatever your heart desires.
I used chopped sweet green pepper, corn, olive, sucuk, tomato and onion.
Drizzle with olive oil.
Sprinkle a pinch of salt and black pepper.
Sprinkle shredded cheese on top and bake for about 20-25 minutes.
I baked 25 minutes.
Let cool for 1-2 minutes.
Lift the pizza by holding the parchment paper, place it on your cutting board and slice.
Carefully peel off the parchment paper.
Place the slices in a serving dish and eat without any guilt.
