Budget Freezer Meals for the Slow Cooker & Oven! Healthy Dinner Recipes - Mind Over Munch

Freezer meals make life easier when it comes to making healthy dinners for the week! These can easily be done meal prep style and use a slow cooker check out my cilantro lime chicken, corn chowder and lasagna rolls!

CILANTRO LIME CHICKEN: http://bit.ly/2p5fWSL
2 lbs boneless skinless chicken breast, cubed
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 cups chopped zucchini
1 cup red onion, diced
16 oz bag frozen corn
15 oz can black beans
2 garlic cloves, minced
1 cup broth
cup cilantro, chopped
2 limes, juiced
1 tsp cumin
salt & pepper, to taste

Add all ingredients to your slow cooker or crockpot and cover.
Cook on low heat for 6 hours, until chicken is tender
Serve with tortillas, on a salad, or as a burrito bowl with rice!

TO FREEZE: Add all ingredients to a freezer bag. Mix and close. Store up to 3 months.
Thaw out the bag in the fridge for 24 hours before making.

CORN CHOWDER: http://bit.ly/2oIhVj6
2 tsp oil
1 medium onion, chopped
3 cloves garlic, minced
salt, to taste
pepper, to taste
1 white/gold potato, peeled and cubed
2 ribs celery, chopped
2 carrots, chopped
1 red bell pepper, diced
2 cups vegetable broth
1 can (13.5 oz) light coconut milk
16 oz frozen corn
tsp paprika
tsp dried thyme

In a large pot over medium heat, saut onion and garlic in oil. Season to taste with salt and pepper.
Add potatoes, celery, carrots, and bell pepper to the pot. Cook until potatoes have softened, around 5 minutes.
Add broth, coconut milk, corn, paprika, and thyme. Stir to integrate.
Bring to a boil, cover, and turn down the heat. Allow to simmer for 15 minutes, until potatoes are fork tender.
Transfer to a food processor or blender and blend until smooth, or use an immersion blender.
Adjust seasonings to taste. Allow to cool.
Enjoy immediately, store in the fridge, or portion into airtight storage containers to freeze! (Lay flat in freezer and stack to save space.)
