If you are looking for a clean eating recipe, be sure to give these a try. It's a nice alternative to kale chips. It's amazing how good vegetables can taste when you roast them.

Brussels Sprout Chips

Ingredients:

brussel sprouts, as many as you wish to make, 1 lb is good.
olive oil
salt
pepper
garlic powder
gruyere cheese, or parmesan, freshly grated

Directions:
Preheat oven 350 degrees F.

Rinse and dry the brussel sprouts. Cut off the stem and peel as many outer leaves as you can and place them in a bowl.

Since it is difficult to peel many leaves off the sprout, get as many as you can and then place the sprout into another bowl for another use.

Once you have enough leaves, coat them with a light drizzle of olive oil. It's best to use your clean hands to rub the oil into all of the leaves.

Then pour the leaves out onto a baking sheet lined with foil (for easy clean up) and season with salt, pepper, garlic powder and then the cheese.

I like seasoning them on the baking sheet as oppose to in the bowl is that you can season all the leaves well as they should be spread out in a single layer.

Place the pan in the oven for 10 minutes and then reduce the heat to 250 degrees F. for an additional 10 minutes or until they are browned and caramelized a bit.

Take them out and pour into a bowl and enjoy! Feel free to add any other spices to this recipe that you like. Some ideas are chile powder, ground cumin, cayenne pepper, smoked paprika, cinnamon, nutmeg, etc. Parmesan cheese works well too. Even a light sprinkling of fresh lemon juice would be nice.
