A warm and comforting kheer made like a one pot meal. You can have this dish even as a whole meal as it is very nutritious and easy to digest due to the palm jaggery.

BROKEN WHEAT PAYASSAM

Ingredients

1 cup broken wheat (lapsi)
2 tbsps ghee
8-10 cashew nuts, chopped
¼ cup raisins (kishmish)
½ cup soaked split skinless green gram (dhuli moong dal)
1 cup palm jaggery
1½ cups milk
¼ tsp green cardamom powder
¼ cup fresh scraped coconut

Method

1. Heat ghee in a pressure cooker, add cashew nuts and sauté till they turn golden. Add raisins and sauté for a minute.
2. Add broken wheat, split skinless green gram and palm jaggery. Add 3 cups water and cook till the mixture comes to a boil. Cover and cook for 2 whistles and allow the pressure to reduce completely.
3. Pour milk and stir. Add green cardamoms powder and coconut and mix well. Transfer into serving bowls and garnish with slivered pistachios. Serve.
