Broccoli and Red Capsicum Dip

A tantalizing dip of red capsicum and broccoli sautéed with celery, onions, and other flavourful ingredients. A mix-in of cheese and fresh cream gives the colourful and crunchy veggies a splendid base. Serve the Broccoli and Red Capsicum Dip fresh and hot right off the stove.

Preparation Time: 15 minutes.
Cooking Time: 5 minutes.
Makes 1 cup.

1 cup chopped and blanched broccoli / blanched broccoli florets
½ cup finely chopped red capsicum
2 tsp butter
½ tsp garlic (lehsun) paste
1 tsp finely chopped green chillies
¼ cup finely chopped celery (ajmoda)
¼ cup finely chopped onions
½ cup grated processed cheese
2 tbsp fresh cream
Salt to taste

For serving
Cream cracker biscuits

1. Heat the butter in a broad non-stick pan, add the garlic paste and green chillies and sauté on a medium flame for a few seconds.
2. Add the celery, onions and red capsicum and sauté on a medium flame for 1 minute.
3. Add the broccoli and sauté on a medium flame for 1 to 2 minutes.
4. Add the cheese, fresh cream and salt, mix well and cook on a medium flame for 1 minute.
Serve immediately with cream cracker biscuits.
