BREAD UTTAPAM

Ingredients

4 brown bread slices, trimmed edges and cut into 1 inch pieces
3 tablespoons semolina (rawa)
1 tablespoon gram flour (besan)
Salt to taste
1 cup yogurt
1 teaspoon fruit salt
1-2 green chillies, finely chopped
2-3 tablespoons chopped fresh coriander leaves
Oil for drizzling
1 medium tomato, chopped
1 medium green capsicum, chopped
¼ medium cabbage, chopped
Ghee for drizzling
Tomato ketchup for topping
Green chutney for topping

Method

1. To prepare the batter, grind together bread pieces, semolina, gram flour, salt and yogurt into a smooth mixture. Transfer in a bowl.
2. Add fruit salt to the batter and mix. Add green chilli and coriander leaves and mix well.
3. Heat a non-stick tawa and drizzle some oil. Pour spoonful of batter to make mini uttapams and top with some tomato, capsicum, cabbage, drizzle some ghee on the edges and cook from both sides till golden brown.
4. Top with some tomato ketchup and green chutney and serve hot.
