Brandy Snap Basket | Sanjeev Kapoor Khazana

Serving fresh fruits ( or for that mater anything) in these brandy snap baskets is going to get you so much praise! .

BRANDY SNAP BASKET - (Serves - 4)

Ingredients

¼ cup golden syrup
½ cup refined flour
¼ cup butter
½ inch ginger, finely chopped
½ cup castor sugar
¼ cup fresh blueberries
6-8 strawberries, roughly chopped
Scoops of vanilla ice cream as required
Fresh mint sprigs for garnishing

Method

1. Preheat oven to 180° C. Line a baking tray with silicon mat.
2. Cream together butter, ginger and castor sugar in a bowl using an electric beater. Add golden syrup and whisk. Add flour and whisk well.
3. Divide the mixture into small equal portions and place at a distance on the lined baking tray.
4. Put the baking tray in preheated oven and bake for 8-10 minutes. Remove from oven, place each baked portion on an inverted bowl, lightly press to shape into a bowl and set aside to cool. Demould the baskets.
5. Place the baskets on a serving platter and put some blueberries and strawberries. Place a scoop of vanilla ice cream on top and garnish with mint sprigs.
6. Serve immediately.
